Located among some 500 wineries in Willamette Valley, the Allison Inn & Spa is a wine lover’s dream resort. The 35-acre property offers sweeping views of grassy hills, snowcapped mountains and working vineyards. In the resort’s Wine Spectator Best of Award of Excellence–winning restaurant, Jory, chef Sunny Jin celebrates the surrounding region’s bounty in his seasonally changing menu. The crudo rotates depending on local catches, and entrées include Oregon-raised proteins such as Elkhorn Farm & Forge Heritage pork and Finnigan Creek Farms beef. Wine director Ken Bolick’s program is inspired by Oregon’s wine regions, while also showcasing strong selections from Washington, Burgundy and California. The list offers multiple verticals from outstanding local producers including Ken Wright Cellars, Shea Wine Cellars and Beaux Frères. Guests can sample various styles from the 800-selection list, with 5-ounce or half-glass pours of 25 still and sparkling wines, plus 2.5-ounce pours of 20 dessert-style wines. There are also five types of flights available, from a sample of local Pinot Noirs to “a trip around the world” tasting.
